It wasn’t too hot today so I decided to bust out the grill. I had to go to the garage to break open a new bag of kingsford charcoal. The blue and white bag. Bought 6 bags a few months ago when they were half off, about 8 dollars a bag, hot! Lit up a chimney full of charcoal.
I rinsed off a whole organic chicken I picked up from Costco. I then butterflied the chicken thinking I would throw a cast iron skillet ontop to keep it flat. However, I decided to just cut it in half for easier handlin. I rubbed the halves down with:
- salt
- brown sugar
- paprika
- cayenne pepper
- random dried herbs
I threw the chicken on the grill and grilled it indirect at about 450 for 35-40 minutes. Took it out when it read 160, amazinly the thigh and the breast read 160 at the same time! booya. I let them sit around for about 10 minutes to allow the juices to redistribute
everything was fully cooked, tender, and moist. Nice! no brine.
Served with fingerling potatoes with butter, salt, and romano cheese
